Crustless Quiche

This is just as good as quiche with pastry, but much better and just as tasty. OK - it may not be as filling, but just serve it with something a little more substantial. This is a great lunch idea because you can make it in advance and have cold, but is just as lovely serves straight out of the oven for a warm dinner.


Hmm, Baked Beans.. the best combo.

To make:

4 large eggs

2 peppers (I use either red, orange or yellow because green are bitter!)

Handful of spinach

60g greek feta (a better alternative to cheddar)

50g chopped chorizo

30g Milk


The beauty of this is that you can use whichever ingredients you have, its great way to use up leftovers in the fridge and enjoy them - again with the quantities, if you want to make more, add more eggs and milk. I literally just throw in anything and everything and it always delivers!


Mix all of the ingredients together, Line a round tin with greaseproof paper, fill and put into the oven on 180 for a good 50 mins (don't open the oven because this affects the cooking process). Leave to stand for 10 minutes before serving.



Simply serve with whatever you fancy, add carbs if you wish, or add more veg - totally up to you!
